Benzoic acid is an intermediate in the manufacture of dyes, as well as an antiseptic and a rust and mildew inhibitor. It is also used in the food industry as a preservative and to improve clarity in plastics.

It is widely used in the production of carbonated soft drinks, sauces, jellies, jams, fruit preserves and pickles. It is generally recognized as safe (GRAS) and is not considered to be hazardous by most governments.

It is used in food at levels below 0.1%. In some countries it is allowed at higher levels, up to 1.25%. It is a d-amino acid oxidase inhibitor, which is known to increase the concentration of d-amino acids, particularly N-methyl-d-aspartate. Research has shown that sodium benzoate can be used as an add-on treatment for schizophrenia by enhancing NMDAR neurotransmission and by increasing the level of d-amino acids in the brain.
